Scratch soup refers to a type of soup that is made from scratch, meaning it is not made from pre-packaged or canned ingredients. The history of scratch soup likely dates back to the invention of cooking, as people have been making soups from scratch for thousands of years.
To make scratch soup, you will need a variety of ingredients, including a broth or stock, vegetables, and any type of meat or protein you prefer. Here is a basic recipe for making scratch soup:
Ingredients:
1 onion, diced
2 cloves of garlic, minced
2 carrots, peeled and diced
2 stalks of celery, diced
1 potato, peeled and diced
4 cups of chicken or vegetable broth
1 cup of diced chicken or other protein (optional)
Salt and pepper, to taste
Instructions:
In a large pot or Dutch oven, sauté the onion and garlic in a small amount of oil over medium heat until softened.
Add the carrots, celery, and potato, and continue to sauté for an additional 5 minutes.
Add the broth and protein (if using) and bring the soup to a boil.
Reduce the heat and let the soup simmer for 15-20 minutes, or until the vegetables are tender.
Season the soup with salt and pepper to taste.
